It was dinnertime tonight and neither Ann or myself had an idea what we wanted.

Cereal? Nah. Fast food? Hell no. I simply had no clue.

Then I recalled a new book that shows you how to make tasty food using nothing but ingredients from Trader Joe’s. We had gone shopping there today and pretty much filled the fridge with tasty foods.

I rummaged around and realized I had the ingredients for something similar to a McGriddles sandwich from McDonald’s. Inspired, I went to it–and here is the result:

Ingredients:

  • 2 Trader Joe’s toasted crumpets (90 calories, 0 grams fat)
  • 2 Slices of Trader Joe’s Turkey Bacon (35 calories, 1 gram fat)
  • 1 Slice American cheese (50 calories, 2.5 grams fat)
  • Grape jam (30 calories, 0 grams fat)*
  • “I Can’t Believe It’s Not Butter” spray (5 calories, 0 grams fat)*

I toasted the crumpets while the bacon was cooking. Once the crumpets were done I added the fake butter, bacon, and slice of cheese. I heated that until the cheese was a bit melty then added the grape jam.

Not to toot my own horn but damn, it was delicious. And while my concoction didn’t beat the RDA of calories (340 v. 370) or sodium (1220g v. 1260g) in an eggless Bacon McGriddle by much, it made up for itself in the fat category:

  • McDonald’s Bacon McGriddle w/o egg: 15 grams of fat
  • Mine: 4 grams of fat

But perhaps the best thing of all: it wasn’t McDonald’s đŸ™‚

On the weight loss front, I’m down 5 pounds since my new commitment. The switch to green tea seems to be making a difference so I’m sticking with it. My beverage menu now consists of green teas by SoBe and Arizona, which are both very good.

And although I have my voice back, I’m still getting over my illness and need some rest. I have a few posts in the works so be on the lookout.
